  • 1 tablespoon coconut oil
  • 2 cups lemon cucumber or any other cucumber, peeled and sliced ¼-inch thick
  • Sea salt
  • Freshly ground black pepper
  • 2 peeled, seeded, and coarsely chopped small tomatoes
  • 4 thinly sliced scallions
  • 2 thinly sliced red Thai chilies (with seeds)
  • 1 smashed garlic clove
  • ½ cup unsweetened coconut milk
  • 1½ teaspoon raw honey
  • Fresh lime juice


Heat oil in medium saucepan over medium heat, being careful not to burn the oil. Add slices of peeled lemon cucumber or any other cucumber. Sauté until the cucumbers begin to soften, about 1 minute.

Season with sea salt and pepper. Add tomatoes, scallions, chilies, and garlic clove. Sauté 2-3 minutes or until vegetables are soft.

Add coconut milk and honey. Simmer 2-3 minutes or until the vegetables are cooked.

Stir in cilantro and lime juice. Season again with salt and pepper. Serve with rice, if desired.
